Buddha bowl? Hmmm. What is that you may wonder? Well it is the best thing since sliced bread (or at least one of, don't forget pizza 😃). A Buddha bowl is the name given to a meal that includes greens, vegetables, beans as well as a healthy grain. You can also feel free to add a dressing if you desire. Oh and it is usually served in a big ole bowl. It gets its name from the shape of the bowl the meal is served in, which resembles the belly of Buddha. Not such a bad thing. I mean, if your meal is going to be named after someone, a really chill dude in pursuit of enlightenment is as good as any.
The ingredients usually make the bowl vegetarian or vegan. Of course, I am only interested in the vegan versions. One of the most fun and amazing things about Buddha bowls is that they are insanely easy to customize and very colourful when assembled.
The first ingredient is greens. Now I know some people may see this and become instantly put off as they think they don't like greens, but I challenge you to name ten different greens that you have tried. Chances are you may have tried maybe three and then decided that you are not a fan. Now I am a big fan of trying different kinds of foods prepared in different ways. With a large variety from the spicy mustard green to the mild taste of cabbage, with a little time and effort you should be able to find something that you actually like. Greens are great to purify and detox the body. They are packed with vitamins and minerals that do the body good.
Next there are the vegetables, cooked and/or raw. Once again, the argument that you are not a fan of vegetables may emerge. Once again, I will challenge you to name ten different vegetables that you have tried; and encourage you to live a little and experiment until you find something that you like. We all have probably been told to eat our vegetables, carrots for better eyesight and other such nuggets (the vegan version, of course) of wisdom. While the impact of individual vegetables may be up for debate, it is generally agreed that eating more vegetables is good for you. So whether raw or cooked, toss them in the bowl.
Then there are the beans. Now with a wide variety to choose from again, feel free to add old favourites or experiment and find something new. Not only are beans a relatively cheap food item, they are filled with fibre and vitamins and minerals that your body will appreciate. Of course, there is the concern that eating beans can cause unpleasant, involuntary release of bodily emissions but there are things that can be done to lessen this such as the means of preparation and the accompanying food items.
To this is added a healthy grain, something that is not overly processed and stripped of its nutritional value. Again feel free to experiment with the means of preparation, you may once again stumble upon a winner.
So once you have gathered all these beautiful ingredients, lovingly place them in a bowl and admire your magnificent handiwork. At this point, feel free to add some dressing if you are feeling fancy.
The bowl below was filled with rice cooked in coconut milk seasoned with dried basil and parsley, fried plantains, black beans, raw tomatoes, carrots and cucumber, topped with fresh parsley. The bowl is lovely ceramic bowl that I only use for eating good-for-your-body food. It looked visually appealing and left me feeling full and satisfied. 👍👍👍
Adding Buddha bowls to your diet is an easy way to get more good food into your system and can help in your transition to veganism.

Pizza is bae
One of the most common questions that I get as a vegan is, "what food do you miss the most?" I usually respond honestly and tell them that I don't miss much. I've never been a huge fan of meat and more importantly I still eat lots of fun things, like pizza.
Pizza is one of my favourite things to eat and now that I can make my own, the only thing that prevents me from eating it is my willingness to make it and the availability of easy to obtain ingredients.
This is one such pizza, using made from scratch pizza dough, spread with store bought pizza sauce and topped with tomatoes, spinach, sweet peppers and purple onions. Simple and delicious.
After it was removed from the oven, nutritional yeast was liberally sprinkled. Then it was allowed to cool for a few seconds, then devoured with gusto. 😁😁😁😄😄😄
